VARIEGATED SCALLOPS (Mimachlamys varia)
The Variegated scallop is a smaller species of the scallop, a type of edible clam. The Swedish name is sunfeather clam. The scallop is is the large white muscle, which is a pricey delicacy abroad. Variegated Scallops with their smaller size are sometimes called “baby scallops” when used in cooking. Variegated scallops are most popular in Spain where they are called “zamburiñas”. According to the Spanish they taste better than larger scallops and are considered a delicacy. Zamburiñas are perfect as appetizers or tapas. They are eaten both cooked and raw, and there are many different cooking methods from different regions of Spain. It is now also possible to buy pickled zamburiñas in cans. Farming of variegated scallops in southern Europe occurs but is very small. We are currently experimenting with ways to farm variegated scallops and also create an interest in introducing them as a new ingredient in Sweden.
