Havstenssunds Oyster Soup

Serves 4 people
Ingredients:
3-4 large Pacific oysters (crassostrea gigas)
2 shallots & optional 1 clove of garlic or any onion
White wine, about 200 ml
Sherry / strong wine with a little sweetness, about 50 ml
About 1 litre of cream (your choice of fat content) or milk
Butter for frying
Tamari soy for colour and seasoning

Method:

Open the oysters and cut out the meat. Be sure to get as much of the muscle as possible. Drain the the oyster juice through a sieve and check that no shell fragments remains in the liquid or oyster meat. If necessary rinse the oyster meat.

Chop the onions and fry in a pot on medium heat in butter.

After about 5 minutes, add the oysters, oyster juice, wine and sherry and possibly some water and cook for a few minutes.

After a few minutes mix with stick blender.

Add cream and boil for a short while, season with salt and tamari

Thicken the soup if necessary with flour or cornflour

Extras:

Rapeseed oil, garlic, chili, salt and basil mixed together.
Drizzle a few drops of the oil when serving.
Serve with bread.
