EATING OYSTERS:

Fresh Swedish flat oysters (Ostrea edulis) are usually eaten raw. An avid oyster lover does not add any extras, but many people like to spice up the oysters with a drop of squeezed lemon, tabasco sauce or vinegar. Usually fresh oysters are served as a canapé or appetizer. Oysters are the perfect conversation piece at parties, and usually becomes the centre of attention.

Pacific oysters (Crassostrea gigas) grow faster than our flat native oysters and have a large variation in size and shape and they quickly become too large to be eaten raw. However, the larger oysters are very useful in cooking, for example in a soup or omelette. Pacific oysters can be eaten cooked all year round, unlike fresh raw oysters. We supply both small Pacific oysters that can be eaten raw (so-called cocktail oysters), and larger oysters that are used in cooking. The most common cooking is to grill the oyster in its shell on the barbecue or in the oven. Well-known dishes of oven baked oysters are Kilpatrick and Rockefeller oysters.
