GREEN SEA URCHIN (Psammechinus miliaris)
Green sea urchins often grow on gear used in aquaculture, or become a by-catch during various types of fishing. Previously, these were considered useless in Sweden, but in several parts of the world the insides of sea urchins (particularly the gonads) are eaten and some species are considered a delicacy. Sushi made from sea urchins is four to five times more expensive than sushi made from whitefish and salmon. Sea urchins are most popular in Japan, Chile, southern Europe and on the west coast of the United States, where they are eaten both raw and cooked. Like oysters, sea urchins are considered a very effective aphrodisiac. We are currently collaborating with several chefs on how to create dishes where sea urchins can be used as an ingredient in Swedish restaurants.
