One type of fast food that we have launched is BBQ oysters, which have become very popular during the summer. Usually the Pacific oysters (Crassostrea gigas) are grilled or baked because they are often too large to be eaten raw.

Scrub the outside of the oysters and place them with the cupped side down on the grill.
Leave them on the grill until the oysters open slightly and liquid comes out.
Remove from the grill, open the lid and cut out the oyster meat and divide into pieces if necessary with scissors or a sharp knife.
Add grill butter and leave on the grill for a few more minutes.

Two different barbecue extras for grilled oysters

1. Mix butter, chopped chili, coriander, crushed garlic and salt. Spread on top of the oysters and garnish with grated cheese.

2. Make a Beurre Blanc sauce and mix in with crème fraiche. Drip on top of the ousters and garnish with grated cheese.

OYSTERS COOKED IN THE OVEN

Oyster are often cooked or baked in the oven. Examples of well-known recipes for baked oysters are Kilpatrick and Rockefeller oysters.

Kilpatrick Oyster

4 servings
Ingredients:

24 oysters
200 grams of bacon, in strips
250 grams of sea salt
2 tablespoons chopped parsley

Kilpatrick sauce

100 ml Worcestershire sauce
50 ml ketchup
2 teaspoons lemon juice
1/2 teaspoon tabasco
1 teaspoon Cognac

Method:

1. Make the sauce first. Mix all the ingredients in a bowl.

2. Open the oysters and remove the flat top shell. Shred and fry the bacon strip lightly.

3. Turn on the grill in the oven.

4. Put half of the salt in a frying pan. Place the oysters in the salt bed so that the liquid does not run out. Spread bacon and sauce over the oysters.

5. Grill in the oven until the bacon is crispy.

6. Spread the rest of the salt on the serving platter. Place the oysters on the salt bed, and add garnish, such as lemon halves and parsley.
